Neither Konrad nor I necessarily have to 'go' to work while we are here in Thailand. Which gives us a lot more time to spend with Olivia. Still, we both have our online projects that we are working on.

In the first couple of weeks, while still settling in, everything seemed to be a bit of a mess. Work and play time were all jumbled together and I think neither of us was really productive or fully embracing hanging out with Olivia.

So starting this week, we are trying to work out a bit of a schedule that will hopefully work better for everyone. Right now I am sitting at one of the many, many coffee shops in Chiang Mai trying to be a productive as possible until noon.

Kicking Goals and Writing About This Recipe!

But, oh the internet is offering just so many distractions. I think it will be a bit of a process, learning to fully use the few hours I have, and then shutting off completely to fully be with Olivia while Konrad has his work time.

Right now I am challenging myself to finish this post in half an hour. This allows for no Facebook distractions or another barely entertaining listicle article.

So let's waste no more time and get to therecipe. I may have mentioned on more than one occasion how much I love Thai food. Most of it is super fresh with lots of vegetables and real food ingredients.

Wrapped Hotdogs are Enjoyed Around the World

It came as a surprise to me to see how much Thai folk also seem to love hot dogs. Our bakery next door has amazing croissants and other pastries, right next to hot dogs wrapped in sweet bread dough.

At the mall I noticed a pretzel shop offering a pretzel wrap, which was basically a hot dog wrapped in thin pretzel dough.

During our first few days at the hotel, we were served a fried egg with two kinds of hot dogs for breakfast.

Options for Your Hotdog-ing

As you can see, hot dogs are everywhere. While I usually prefer real food, there is no denying the awesome convenience of hot dogs.

Check out Applegate Farms for natural and organic meats (yes, even hot dogs and bacon) if you can't get yourself to eat regular hot dogs. Although, you can totally wrap cooked chicken breast bites into bacon for a very similar (more real) appetizer.

What makes these little bite-sized goodies even more amazing, is the sweet chili sauce. It's super easy to make at home and this version uses honey as a natural sweetener!

Bacon-Wrapped Mini Hot Dogs with Thai Sweet Chili Sauce

Ingredients

  • ~18 count 4 oz mini hot dogs
  • 9 bacon slices

Thai Sweet Chili Sauce

  • 2 fresh long red chilli peppers
  • 2 garlic cloves minced
  • 1 teaspoon ginger freshly grated
  • ½ cup water
  • ½ cup white wine vinegar
  • ½ cup mild honey
  • ½ teaspoon salt

Instructions

  • Cut the bacon strips in half. Wrap half a slice around one mini hot dog and secure with a toothpick.

  • Heat a frying pan on low and add the bacon-wrapped mini hot dogs. Cook on low, turning regularly, to cook the bacon from all sides.

  • Serve with Thai Sweet Chili Sauce.
