Egg salad is a classic recipe. We all have our own favorite. We all grew up with mom or grandma making their signature flavor and usually sticking to that.

Well we like to branch out. I’m not shy to taste anyones recipe, even when I clearly have my own favorite somewhere. This Dill Pickle Egg Salad Recipe is one of our favorites and we’ve been making it this way for years.

WHAT IS EGG SALAD MADE OF?

Usually the basic ingredients consist of eggs, mayo and a little spices if you need, below are the ingredients you need for my Dill Pickle Egg Salad.

  • Hard boiled eggs
  • Mayo
  • Pickle juice
  • Mustard
  • Salt
  • Pepper
  • Dill pickles

7 ingredients is all it calls for for this ridiculously easy and tasty egg salad sandwich recipe. I mean come on. Egg Salad has always been one of my go to recipes, and usually we like to keep hard boiled eggs on hand at all times, not just for this but because they are good for snacks.

HOW TO MAKE THE PERFECT HARD BOILED EGGS:

There are so many ways of making the best hard boiled eggs. I learned a specific time and method from my mom growing up and it has never failed me. There is no special ingredients or equipment needed!

  1. Place eggs in pan and cover with water.
  2. Bring to a boil and let boil for 5 minutes.
  3. Cover and remove from heat and let sit 15 minutes.
  4. Drain off warm water and replace with cold and let cool slightly before peeling.

Usually with this recipe the shells are super simple to peel off, since that is the one complaint we have when it comes to hard boiled eggs is the stupid shells getting stuck or not coming off all at once.

You can also buy already hard boiled eggs at the store, they are a little pricier than just buying a carton of eggs, but sometimes it’s worth the hassle, let me tell you!

But for real, we love this Dill Pickle Egg Salad. We are a huge lover of pickles so adding pickles to almost everything is a no brainer here. If you are a pickle lover you might also like Pickle Dip Pinwheels, Dill Pickle Bacon Cheese Ball or this Cheeseburger and Fries Casserole!

HOW TO MAKE THIS DILL PICKLE EGG SALAD RECIPE:

  1. Chop your hard boiled eggs and add to a bowl and set aside.
  2. In medium bowl whisk together your mayo, pickle juice, mustard, sugar, salt and pepper.
  3. Fold in your eggs and pickles until coated, refrigerate until ready to serve.

One question I get a lot is “how long does homemade egg salad last”? Properly covered and refrigerated your egg salad recipe should last about 3-5 days. I do not recommend leaving egg salad at room temperature for more than 2 hours at a time.

There are so many different ways that you can serve this recipe such as on croissants like I did, sandwich bread, toast, pita bread, crackers, etc. There are different ways people eat egg salad based on their location, we love it on croissants, mainly because croissants are addicting.

We also love serving this on a slice of toast, so so so good!

Ingredients

  • 10 hard boiled eggs peeled and chopped
  • 1/2 - 3/4 cup mayo
  • 1/2 Tbs pickle juice
  • 1 tsp mustard
  • 1 Tbs sugar
  • 3 pickle spears chopped
  • Salt & pepper to taste

Instructions

  • In bowl whisk together mayo, pickle juice, mustard, sugar, salt and pepper.
