My mom did Weight Watchers when I was a kid, and I remember she was obsessed with zero point soup. It was really just a cabbage soup, and my oh my did I not love cabbage as a kid. I hated coming home from school and smelling that cabbage cooking.

Today, as an adult, I love the stuff. How does that happen? And besides that, as a member of Weight Watchers, I certainly appreciate how it is very filling and just ZERO points.

Because I now do Weight Watchers now, (semi-religiously), I wanted to try out a new version of the old school zero-point cabbage soup. Mine has a lot more flavor than Mom’s did, and it smells better, too! So if you are low on points, and need a terrific zero point option, I highly recommend my zero points soup recipe below.

Saute onions, carrots, and garlic in a large pan for 5 minutes.

Ingredients

  • 3 C. Vegetable Broth
  • 1 Tbsp. Minced Garlic
  • 2 Tbsp. Tomato Paste
  • 1/3 C. Diced Tomatoes
  • 2 C. Chopped Cabbage
  • 1/2 White Onion
  • 1/2 C. Sliced Carrot
  • 1 1/2 C. Green Beans
  • 1/2 Sliced Zucchini
  • 1 Tsp. Oregano
  • 1 Tsp. Pepper

Instructions

  • Saute onions, carrots, and garlic in a large pan for 5 minutes.

  • Add the rest of the ingredients to the pot and simmer on medium/high heat for 10-15 minutes or until veggies are cooked through.

  • Serve and Enjoy!
