  • Pam cooking spray or other cooking spray
  • 14 cup 2% low-fat milk
  • 1 clove garlic, pressed
  • 14 cup cornmeal
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 12 teaspoon lemon pepper
  • 2 -4 teaspoons creole seasoning or 2 -4 teaspoons cajun seasoning
  • 4 (4 ounce) catfish fillets
  • 12 teaspoon paprika

  • Preheat oven to 400 degrees F.
  • Spray Pam over the baking sheet.
  • Combine garlic and milk in a bowl (or pie plate) set aside.
  • Combine cornmeal, thyme, basil, lemon pepper, and cajun seasoning in a bowl (or pie plate), set aside Dip catfish filets in milk then in cormeal mixture.
  • Place on prepared baking sheet and sprinkle fish with paprika.
  • Spray catfish with cooking spray.
  • Bake for 20- 30 minutes, until the crust is golden and fish flakes easily.

  2. This was delicous! Because I didn't have two of the specified ingredients, I substituted garlic powder in place of fresh garlic, and Old Bay Seasoning instead of cajun seasoning. My husband thought it was still fabulous. I shall make this recipe again.

  3. This recipe ROCKS!!! I let the fish sit in the milk and garlic for quite a while, and I used a bit more creole seasoning in the two pieces that my bf and I ate hehe.. but the family loved this.. Thanks for suggesting it.. its definitely a recipe I'll hold on to :-) everyone loved it!!! The lemon pepper really adds some wonderful flavor to the fish. Oh, By the way, you didnt mention when to add the paprika, so I just put it in with all of the other seasonings!! Thanks for a great recipe!!!!

If you substitute the 2% milk for skim milk and use a total of 16 oz of tilapia, each serving of fish is 3 ww points. Very yummy! Thanks so much!

  1. Great recipe! I had to make a few substitutions because I didn't have some of the ingredients. Instead of milk, I used 2 eggs. I didn't have cornmeal, so I used plain breadcrumbs (although I can't wait to have this with cornmeal) and because I didn't have it, I left out the lemon pepper. I combined all the dry seasonings, using Old Bay, in a large ziplock bag. I find the fish gets coated better and clean up is easier. Even with the substitutions, this recipe was delicious. I can't wait to try it again next time.
