Need a savory treat? This cheddar cheese cookie recipe was inspired by a product I received from Cabot Creamery but all opinions expressed here are my own.

Cheese is one of my very favorite foods. I firmly believe that just about everything tastes better when it is smothered in cheese of some sort. Having grown up in New England, I learned very early in life to appreciate a good, sharp cheddar cheese. Cheddar cheese goes on crackers and makes homemade macaroni and cheese worth the effort of making it. It is delicious served with a slice of apple pie or just a few grapes or pear slices. Don't be fooled by cheap cheese. A good, high-quality cheddar is worth every penny!

I have been working with Cabot Creamery for many years now, however, I have actually been EATING their cheese ever since I was a little kid. Since Cabot's roots are in Vermont (and that is where most of my family is), this is a brand I saw quite a bit of as a kid. They have a wide variety of cheddar cheeses to choose from and they are a perfect addition to this savory treat! Tonight I will be making a nice, big pot of homemade tomato soup and this cheddar cheese cookie recipe is the perfect addition to our meal.

You can vary the flavor profile of this cheddar cheese cookie recipe based on your own personal preferences. I love the taste of rosemary and it is starting to take over the backyard garden so I harvested a bit today for this savory treat! If you want to give them an Italian flavor profile, use herbs like basil and oregano and garlic powder. There are a ton of different ways to make these cheddar cookies unique!

These cheddar cheese cookies take very little effort to make but you will need to chill the dough for an hour so plan ahead. Just mix the ingredients, roll into balls, press gently, and chill. They bake for 15 to 20 minutes and only need to cool for a minute or two before eating them. If you want a bit more of a salty profile, sprinkle with some coarse salt before baking but the cheese is already fairly salty so you really don't need it.

Ingredients

  • 2 cups shredded sharp cheddar cheese
  • 1 1⁄4 cups flour
  • 1⁄2 cup butter, melted
  • ½ to 1 tablespoon Rosemary

Instructions

  1. In a large bowl, combine the shredded cheddar cheese, flour, melted butter, and rosemary. Mix until combined and dough holds together.
  2. Shape the dough into 1 inch round balls.
  3. Place balls on ungreased cookie sheet and flatten gently with the bottom of a cup.
  4. Refrigerate for 1 hour
  5. Bake in a preheated oven at 400 degrees for 15 to 20 minutes or until almost golden.
  6. Remove from heat and let cool on tray for 3 to 4 minutes
  7. Eat and enjoy!
