Tofu, A.K.A.bean curd, is a food made by coagulating soy milk and then pressing the resulting curds into soft white blocks. The resulting blocks can soft, firm, or extra firm. Its got a subtle flavor and is often seasoned or marinated to suit the dish being made. Usually, tofu is something that people either love or hate. I was on team hate for quite some time. That is, until I started dating myhusband a decade ago. We had just started dating when he offered to make me Pad Thai. When I got to his house I realized he was making it with tofu (say what?!). Since I didn't want to disappoint him, I sheepishly ate my meal. To my complete surprise, I liked it! I quickly made the jump to team tofu and the rest is history.
